1.Even out the chicken
This part feels annoying, but it matters. Put one chicken breast between folded parchment paper and gently hit it with a rolling pin. You're not smashing it flat, just evening out the thicker side so it cooks at the same pace. Do the same with the second one.
2.Mix the seasoning
In a small bowl, stir together the salt, pepper, paprika, garlic powder, oregano, and brown sugar. It won't look exciting, but trust it.
3.Season both sides
Sprinkle the seasoning over the chicken. Don't be shy. Press it in with your hands so it sticks instead of falling off later.
4.Add the oil
Drizzle the oil over the chicken and rub it around. Both sides. It should look lightly coated, not greasy.
5.Air fry
Place the chicken in the air fryer basket with a little space between each piece. Cook at 400°F (200°C) for about 11-12 minutes, flipping halfway through. If your air fryer runs hot or your chicken is on the smaller side, check it early.
6.Rest, then slice
Once it's cooked through (no pink, and about 167°F inside), let it sit for a minute or two. I used to skip this step and regret it every time. The juices stay put if you wait.
