Ingredients

  • 1 16-ounce / 454 g can sliced peaches in light or heavy syrup (do not drain)
  • ½ box yellow cake mix about 7.5 ounces / 213 g
  • 4 tablespoons 57 g unsalted or salted butter, cut into small pieces
  • ½ teaspoon ground cinnamon or more to taste
  • Vanilla ice cream for serving (about 4 scoops)

Method

Dump the peaches.
  1. Open the can and pour them into your baking dish, syrup and all don't drain them. That liquid is doing real work here, bubbling up through the cake mix as it bakes.
Add the cake mix.
  1. Sprinkle the dry mix evenly over the top until you can't really see the peaches underneath anymore. You're not stirring anything, just covering. It'll look a little strange at this point, like a layer of powder sitting on fruit, but that's exactly right.
Add the butter.
  1. Cut it into small, bite-sized chunks and scatter them across the surface of the cake mix, spreading them out as evenly as you can so the butter reaches most of the top. Some dry spots might still happen that's fine, more on that below.
Add the cinnamon.
  1. I'm generous here because I really love cinnamon with peaches. If you're more conservative, start light you can always add more once it comes out, but you can't take it away.
Bake. 375°F for 45 minutes.
